How to enhance your Six Ravens experience at Disney Springs

Gideon’s Bakehouse concept Six Ravens began serving Disney Springs guests this week with a soft opening phase. The menu of six “Coffyn” hand pies, smashed potato sides, and Gideon’s Cookie Tarts is just part of an experience requiring a little explanation, some patience, and a few suggestions.

Lore and lines

The name “Six Ravens” is based on a medieval legend of resident ravens guarding the Tower of London fortress. The legend is deepened by an original tale of a king, jester, friar, executioner, knight, and archer on a quest to save a famine-stricken land.

At Disney Springs, the quest begins with an in-person line or virtual queue. Character designs are presented on meal box packaging while interior decor features tapestry-style illustrations, a carved stone wall, and moody lighting. The dark venue is a brief respite from the Florida heat, but there’s no seating. The quest ends at a grab-and-go counter to keep the famine in check at a steady pace.

Servings and sauces

Coffyns come with dipping sauces matched to each flavor profile and the smashed potato sides come with a honey mustard sauce. Owner Steve Lewis worked on the menu with local chefs to develop the recipes and pairings, but guests are welcome to experiment. Coffyns can be cut in half (sword not included but there is a small knife) and sauces come with a spoon to add the perfect amount to each bite.

Orders are limited to 2 Coffyns per paying guest and additional sauces cost extra, but you get a big cupful with each serving. In response to social media questions regarding food allergens, Lewis stated information is available from Six Ravens staff.

Eat fresh

Quality is no joke at Gideon’s Bakehouse; to the point that cookie boxes have a printed warning suggesting microwaving will “bring shame to you and your family.” Six Ravens' quality is taken as seriously by Lewis and company. A recent social media post includes the following advisory:

The best experience is fresh and within 15 minutes of purchase. If you must bring things home, we recommend wrapping them in foil when reheating in an air fryer or oven if you want to keep the exterior soft.

It may seem excessive, but the Coffyn crust is like a yeast roll and moist fillings will take a toll.

Lewis credits local collaborations for Gideon’s success and in the development of the Six Ravens menu. The following restaurants are listed with their contributions:

Guests who are curious about the partnerships are encouraged to visit the restaurants.

Beer selections are forthcoming and will feature brews from Crooked Can, Sideward Brewing Co., and Ravenous Pig. Future additions will include bottled sauces for sale. A sticker is included with meal boxes, but more merch is planned. Additional desert selections, a breakfast menu, and a grand opening tentatively scheduled for September.
