Inside Look at the New Rosa Mexicano Restaurant at Disney's Dolphin Resort

A new restaurant has opened on Disney property, and it’s already proving to be a delight. Guests can now dine at Rosa Mexicano at Walt Disney World Swan and Dolphin Resort (on the Dolphin Resort side). Read on to learn more about the restaurant, its menu, and what makes it stand out.  

The Restaurant 

The new Rosa Mexicano location is one in a chain of restaurants dating back almost 40 years. Founded by Chef Josefina Howard, the first restaurant opened in New York in 1984, and since then ten other locations have opened throughout the eastern United States.

The atmosphere of Rosa Mexicano at Disney’s iconic Dolphin Resort truly makes it feel like a fiesta. The dining room, with walls lined by vibrant portraits of Mexican artist Frieda Kahlo, welcomes guests to enjoy authentic Mexican cuisine, but the restaurant bar is also open for those looking to grab quick bites and drinks before hitting the Disney theme parks.

The Food 

One of the restaurant’s most popular menu items is Guacamole en Molcajete, made tableside. While a restaurant team member prepares the dish, they explain the process and Rosa Mexicano’s unique recipe (for instance, the recipe does not include lime, which is used for preservation, because there’s no way guests will have guac left after the meal). Enjoy it with corn tortilla chips, roasted tomato salsa, and (this is optional, but a personal favorite) three-cheese blend queso—talk about a starter course.

If you want a little more after this delicious appetizer, Rosa Mexicano offers a taste of the flavors of Mexico through its menu, with quesadillas, carnitas, enchiladas (a favorite since 1984) and more. Have a large group? Shareable meals like parrilladas help keep the festive vibe going as the party gathers around a sizzling platter and piles tortillas with an assortment of grilled meats and toppings (it’s kind of like the ultimate taco bar).

The Drinks

Margaritas are often the beverage of choice when dining at a Mexican restaurant, and Rosa Mexicano’s do not disappoint. The frozen pomegranate margarita has been the restaurant chain’s signature cocktail since 1984, but guests can also enjoy other flavors like strawberry, passion fruit, mango, lime, and watermelon. 

Looking for something else? With different types of tequila, mezcal, and other liquor, as well as a beer and wine menu, there’s something for everyone to enjoy. And for the non-drinkers in the group, a list of mocktails allows guests to enjoy all the flavors without the spirits.  



Overall 

Rosa Mexicano is a great dinner spot for vacationers and locals alike, as it’s near popular attractions like Disney’s Boardwalk and EPCOT. Since reservations are recommended for dinner, be sure to book a table so you can enjoy good food, good vibes, and a good time!
