Toledo at Coronado Springs Resort

Located all the way up on the 16th floor of Coronado Springs Resort at Walt Disney World is Toledo. This restaurant serves up Spanish inspired cuisine, in a beautiful setting with a rooftop view of the parks.

High Tech Elevator

I don’t know if anyone will be as fascinated by what I’m about to say as myself, but getting to Toledo was truly so much fun. This resort is stunning, and the elevators are so high tech! Upon entering the elevator lobby, I quickly realized that the touch screens aren’t your usual elevator buttons where you simply click up or down. Instead, you press the floor that you are traveling to on the touch screen. It will then tell you the numbered elevator to get into. Once you step inside, it will take you straight up to the floor you selected without touching any buttons inside the elevator at all!

The Restaurant

Upon entering the 16th floor, you’ll come upon a lobby with Toledo on your left, and Dahlia Lounge on your right. Both restaurants have incredible views of Walt Disney World. Even from our table at Toledo we could see the Tower of Terror in the distance! 

Once we entered Toledo, I immediately thought that this was one of the most beautiful restaurants I’ve seen on Disney property. Not only are the walls all around you full length windows to truly take in the sights, but the inside of the restaurant is decorated with inspiration from surrealist art and the 1930s avant-garde styles. On the ceiling there are beautiful stained glass windows with lights behind them. These change colors throughout the night, illuminating the room in shades of reds, purples, and blues. I was enjoying the ambience so much, it took me a while to finally choose my food!

Food & Drink

There are a variety of delicious options to choose from at Toledo, ranging from small plates and tapas to full size entrees. We decided we wanted to try a shmorgishborg of different foods, so we ordered many different appetizers and sides instead of full on meals and honestly, it was so filling! The Rioja-braised Chorizo was one of the favorites of the table. As simple as it sounds, the Roasted Tomato Bomba Rice was full of flavor and another of our top picks! Our absolute favorite thing that we tried though was dessert.

We picked the 50th Anniversary Dessert at the suggestion of our server. This is an almond cheesecake that is served with pistachio sponge, meringue, fresh raspberries, and more. The almond crust of this cheesecake reminded me of the shortbread cookies that I used to eat from my grandma’s tins, so buttery and nostalgic! The cheesecake itself was so light and airy, I would even go back just for that! 

Every drink we tried was also delicious, our favorite being the Sangría-Tini. As it sounds, it was essentially a sangria in a martini glass made with vodka, red wine, sweet and sour, and other delicious flavorings. The Tequila Daisy was another delicious choice. This is made with Blanco Tequila, Mediterranean oranges, grapefruit, lime, hibiscus, and soda water. It’s also extra special to me because my Abuela’s name is Daisy!


Overall

Toledo is a stunning restaurant at Disney’s Coronado Springs Resort and the perfect place to go for handcrafted drinks and all kinds of unique foods. Next time, I’d love to check out the Dahlia Lounge next door because they have even more food offerings and drinks to try!
